Ingredients
Basic Queso Blanco
½
cup
sweet onions finely chopped
1-3
cloves
garlic
I love garlic

jalapeno pepper finely chopped
add more for heat

cumin
⅔-¾

half and half
you could use cream or milk
¼
lb
cheese-white american, white cheddar, monterey jack, or chihuahua
you can use more than one cheese!
Spicy Queso
1

chipotle pepper ground

whole
quajillo pepper
ancho, negro whatever is fine.
½
cup
diced tomatoes
¼
cup
diced green chiles
Instructions
Queso blanco
saute onions in 1 T of canola oil
½ cup sweet onions finely chopped
add garlic, cumin and jalapeno and saute for 30 seconds
1-3 cloves garlic,
1 whole jalapeno pepper finely chopped,
1 tsp cumin
add half and half and heat up. Stir so it does not boil over
⅔-¾ cup half and half
slowly add cheese or cheeses and stir
¼ lb cheese-white american, white cheddar, monterey jack, or chihuahua
after cheese is melted turn of heat and cover until ready to use
Spicy Queso
Do all the steps above but add additional spices, tomatoes, and green chilis at the garlic, cumin and jalapeno stage
1 whole chipotle pepper ground,
1 whole quajillo pepper,
½ cup diced tomatoes,
¼ cup diced green chiles
