Meats
brown or grill ground beef or beef of your choice
1 lb ground or beef or your choice
Grill or Roast chorizo and pork roast, let rest and chop into bit size pieces
1 lb pork roast, 1 lb chorizo
Heat large pot and add 1-2 tbsp of oil to saute sweet onions

add garlic and cook for 30 seconds to release aroma but not burn garlic
2-3 cloves garlic-I always use fresh
add dry spices and cook for 30 seconds to release aroma
3 whole smoked peppers, I used ancho I grind them before use, 1 tbsp Cumin, 1 tbsp smoked paprika, 2 tsp white pepper, tsp Mirch or other hot pepper to taste
add rest of ingredients including meat. Rinse beans if canned!
8 oz diced green chilis, 28 oz crushed tomatoes, ¼ cup apple cider vinegar, 1 tbsp mexican oregano, ¼ cup whisky, ¼-⅓ cup brown sugar- to taste, 32 oz beef stock
bring to a simmer and reduce for 1-1.5 hours. Your desired consistency
